Don't have a clue about .com's dropping process. But I take it they usually go to some kind of auction when they expire.
Question is, if I don't renew a name and it goes through the process, does it keep the original creation dates or do they get reset?

It has been a long time since I was involved with this, so my memory is a bit hazy. I think by now most registrars have agreements with a service like NameJet and an unrenewed domain would go to a pre-release auction. If you buy a domain through pre-release, the original creation date remains the same as the domain never really drops. If the domain actually drops, then when it's caught the creation date is reset. I think by now anything decent will get picked up in pre-release unless the domain is with some rare registrar that doesn't send expiring domains to auction.
